Guanciale
Coated with salt and pepper and aged for an especially long period of time until it forms its typical dark, compact outer crust, while inside it remains soft with a very intense flavour.
Guanciale is an essential addition to many Tuscan dishes, and the main ingredient of ‘Pasta alla Carbonara’.
